How Do Bees Make Honey? From Nectar to Hive

Honey is not bottled nectar. Between the flower and the jar, a complete chemical and physical process takes place inside the hive, and these are its steps as the scientific sources describe them.
It All Begins with Nectar
A worker bee gathers nectar from flowers and stores it in a dedicated stomach known as the honey stomach, separate from her digestive stomach. At this stage nectar is a thin liquid, and its water content can reach 70% or more depending on the type of flower and the weather. Left as it is, it would ferment within days.
The Transformation Inside the Hive
On her return, the forager passes her load to another bee inside the hive, and the transfer is repeated from mouth to mouth. With each hand-over, enzymes are added — chief among them invertase, which breaks sucrose down into glucose and fructose, and glucose oxidase, which produces gluconic acid and a measure of hydrogen peroxide. These two enzymes are the reason for honey's low pH and its resistance to microbes.
The bees then spread the nectar in a thin layer inside the hexagonal cells and fan their wings to generate an air current that evaporates the water. When the water content falls to the required level, the cell is closed with a wax capping, and that seal is the bees' signal that the honey is ready for storage.
- Nectar: a sugary liquid that can be more than 70% water.
- Ripe honey: less than 20% water under the Codex Alimentarius standard, and in practice between 16% and 19% in most samples.
- The wax capping: a mark of ripeness for the honey inside the comb, not merely a lid.
How Many Flowers Does Half a Kilogram Take?
The Cornell University Pollinator Network notes that producing about half a kilogram of honey requires visits to some two million flowers. Sector sources also circulate another popular figure — that a single worker produces about one twelfth of a teaspoon over her entire life — a number that appears in American Honey Board bulletins more than as the result of a published measurement, so treat it as a widely repeated estimate rather than a measurement.
How Far Does a Bee Fly?
A study at the University of Sussex analysed more than five thousand bee dances to measure actual foraging distances: a spring average of 493 metres, a summer average of 2156 metres and an autumn average of 1275 metres. The range shifts with the season, in other words, rather than being a fixed number. In lean seasons the circle widens considerably: another study recorded a median of 6.1 kilometres, with flights beyond 9 kilometres.
